Quesadilla recipe

A really simple Mexican dinner idea.
Ingredients (serves 4):
- 8 flour tortillas
- 350g mushrooms, sliced
- 150g baby spinach
- 120g grated cheese
- 1tbsp olive oil
- 1tbsp ground cumin
- 1tbsp ground coriander
- 2tbsp paprika
- 1/2tbsp chilli flakes
- 2 cloves garlic, crushed
- salt and pepper
Serving suggestions
- jar of salsa
- 100g light sour-cream
- guacamole
Method:
Preheat the oven to 180C.
Heat the oil in a pan on a medium heat.
Add the crushed garlic. Cook through for a minute or two, making sure the garlic doesn't burn.
Add the sliced mushrooms, cook for 2 to 3 minutes, then add the spices. Add salt and pepper to taste.
Reduce heat and cook until the mushrooms are soft. Make sure not to burn the spices.
Spray two large oven-trays lightly with olive oil. Place 2 tortillas on each tray. Place an equal amount of the mushroom mixture, cheese and spinach on each tortilla.
Place a second tortilla on top of each tortilla on the tray. Lightly spray the tops of each tortilla with olive oil.
Place in oven for 10 minutes or until cheese is melted and tortillas are brown.
Serve with salsa, sour cream and guacamole as desired.
