Vegetarian Satay recipe

A rich but low-fat vegetarian satay using replacement meat.
Ingredients (serves 3 or 4):
- 2 tbs smooth or crunchy peanut butter
- 50g raw peanuts
- 1/2 tub Light Natural Yoghurt
- 1tbs plain white flour
- 1 medium onion, chopped
- 4 serving mock duck, drained and chopped
- 1tsp chilli flakes
- 30 g red curry paste
- 1 1/4 cup raw white rice
- 150g snow peas
Method:
Spray pan lightly with olive oil spray, bring to medium heat. Add onions and stir-fry for a couple of minutes until light brown.
Add the mock duck and fry for 1 minute. Add red curry paste, peanut butter, peanuts and chilli, fry for 1 minute more.
Add 1 1/2 cups of water and simmer for 10 minutes.
Add snow peas and more water if the sauce is getting too thick. Cook for a further 5 minutes.
In the meantime, boil a sauce pan of water and cook the rice.
Take the satay off the heat and allow to cool. Combine plain flour and sour cream, add to the sauce. Heat through.
Tip: The sour cream will curdle from the heat if you don't let the satay cool.
